For 2 portions you will need the following 7 ingredients:

  • 4 medium eggs
  • A little butter for frying
  • Feta cheese
  • Coriander just a sprinkle
  • Chilli  flakes
  • Salsa
  • A full avocado

How to make it in 5 steps…

  1. Put all the eggs in a blender and blend until creamy.
  2. Dice the avocado.
  3. Melt the butter in a frying pan until it starts brown.
  4. Pour the eggs into the pan sprinkle the coriander and as much metabolism boosting chilli as you wish until cooked.
  5. Place the remaining salsa and avocado in the middle of the omelette and fold.
